pumpkin cookies

This weekend I tried Karalee's pumpkin cookie recipe. They are completely gone. On Friday I made some chocolate chip peanut butter swirl cookies and they are still sitting in the cookie jar, the pumpkin cookies...... GONE. I thought they were really good, the only thing I might try next time is maybe adding a little more pumpkin pie spice or some nutmeg. I did not add raisins, but I did add walnuts.



I am hoping Julia or Shannon will offer the pumpkin square recipe so I can try it too.

My mother-in-law has a great recipe and uses LOTS of chocolate chips. I'm not a pumpkin fan but I sure can down these easily. YUM!!

Pumpkin Squares

2 c. sugar
1 c. oil
4 eggs

-blend-

2 c. flour
2 tsp. baking powder
1 tsp. baking soda
¼ tsp. salt
2 tsp. cinnamon
1 tsp. vanilla
1 tsp. pumpkin spice (optional)
16 oz. Can pumpkin

- blend-

pour in a long pan and bake at 350 degrees for 20-30 minutes

Cream cheese icing

6 oz. Cream cheese, softened
6 tsp. margarine
2 c. powdered sugar
1 tsp. vanilla
2 Tbsp. Milk

Add milk slowly while blending.
