Holiday recipes




A few years ago, I received a yummy pumpkin bread recipe from my sister. It is a great recipe for mini breads. I have been thinking of making this recipe since it is the season to cook pumpkin. I do kinda want to try something new.
I was looking on line and there are tons, I mean TONS of recipes but I am not sure I want to be that daring. So I am calling on all of my friends, to give me a yummy pumpkin recipe to try. It can be bread, cake, soup, cookies I don't care. My only request and I don't want to be super picky, OK yes I do want to be picky, please don't send me anything that will look like this...

For some reason this doesn't look very appetising to me.

So let me have it!

Ok,I really have nothing, but...Anytime I get pumpkin bread, it's much better with chocolate chips!

Pumpkin Spice Cookies

I have a super yummy family favorite pumpkin spice cookie. If you like pumpkin bread and pie, then I am confident that you will love this cookie. It is a Mrs. Field's cookie recipe, so here goes:

2 1/2 cups all purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
2 tsp. pumpkin pie spice
1 cup dark brown sugar, packed
1/2 cup white sugar
3/4 cup salted butter, softened
1 large egg
1 cup pumpkin
1 tsp. pure vanilla extract
1 cup raisins (optional)
1/2(2 oz) cup walnuts, chopped (optional. I am allergic, so I always leave this part out)

Preheat oven to 300 degrees

In a medium bowl combine flour, soda, salt and pumpkin pie spice. Mix well with a wire whisk and set aside.

In a large bowl blend sugars with an electric mixer set at medium speed. Add the butter nad beat to form a grainy paste. Scrape sides of bowl, then add egg, pumpkin and vanilla. Beat at medium speed until light and fluffy.

Add the flour mixture, raisins and walnuts. Blend at low speed just until combined. Do not overmix!

Drop by rounded tablespoons onto ungreased cookie sheets, 1 1/2 inches apart. Bake 22-24 min. until cookies are slightly brown along edges. Immediately transfer cookies with a spatula to a cool surface.

Karalee I love everything but the raisen but I am giving this one a try.

This is a recipe for pumpkin cake and it is really good warm and served with ice cream.

1 large can pumpkin
1 12 ounce can evaporated milk
4 eggs
1 cup sugar
1 tsp cinnamon
1/2 tsp nutmeg
1 yellow cake mix
3/4 cup softned butter

In large bowl mix pumpkin, evap. milk, eggs, sugar, cinnamon, and nutmeg. Pour into a 9x13 pan. Sprinkle dry cake mix on top, then drizzle with melted butter. Bake at 350 for 55 minutes.
